Step 1 – Prep the mushrooms:
3 Cups sliced mushrooms
3 cloves garlic minced
2 tablespoons butter
1 tbsp olive oil
1/4 cup dry Marsala wine
Salt and pepper to taste

Heat butter and olive oil in a heavy skillet, I use cast iron, add all ingredients and saute until slightly browned.

Add marsala and cook until liquid is absorbed, about 10 to 12 minutes. Set aside.

This step can be done up to 3 days ahead.

Step 2 – cook the dish:
4 thin sliced chicken breasts, or pounded to 1/2 inch thickness
1/4 cup almond flour
2 tbsp olive oil
2 tbsp butter
2/3 cup chicken broth
2/3 cup dry Marsala wine
2/3 cup heavy whipping cream
2 tsp chopped thyme
3 tbsp chopped shallots
2 cloves garlic chopped
Salt & pepper
Chopped Italian parsley for garnish

Heat olive oil in skillet, add chicken and cook until cooked through, 2 to 3 minutes per side.

Remove chicken and set aside.

Melt butter and add mushrooms, shallot, garlic and 1/4 tsp salt and cook for 1 minute.

Add marsala, chicken broth, thyme, heavy cream, 1/4 tsp salt and 1/8 tsp pepper.

Using a wooden spoon to scrape up any brown bits from the bottom of the pan and bring to boil, simmer for 10-15 min until sauce is thickened.

Add chicken and cook until heated through, 2-3 min.

Serve over cauliflower rice.
